Honey Coconut Flan With Berry Sauce
Serves 4Ingredients:
1 1/2 cups coconut milk (shake the can before opening)
3 eggs, lightly beaten
1/4 cup honey
1 teaspoon minced orange zest
2 cups mixed ripe berries
Toasted coconutDirections:
1. Preheat oven to 300 degrees F and spray four 1/2-cup ramekins or one 3-cup mold with nonstick cooking spray.2. Combine milk, eggs, honey and orange zest in a large bowl and whisk until blended. Pour into ramekins or mold, and place on a wire rack in a pan of hot water. Bake for 15 to 20 minutes for the ramekins or 30 to 40 minutes for the mold. Flan is done when a knife inserted in the center comes out clean.3. Cool flan on a wire rack and refrigerate for 2 hours. Run a knife around the edges to loosen, and invert onto a serving plate.4. Puree berries and press through a fine sieve to remove any seeds or solids. Add honey to sweeten, if necessary. Pour over flan and garnish with toasted coconut.
Honey Frozen Yogurt
Makes 1 quartIngredients:
2 cups milk
3/4 cup honey
Pinch of salt
2 eggs
2 cups AE Dairy plain yogurt
1 tablespoon pure vanilla extractDirections:
1. Heat milk in a large saucepan over medium-low heat (do not boil). Stir in honey and salt.2. In a small bowl, lightly beat the eggs. Pour a small amount of warm milk into the egg mixture and continue to whisk. Pour egg mixture into saucepan, and continue to cook and stir for 5 to 6 minutes or until mixture coats the back of a wooden spoon.3. Remove from heat and cool completely. Stir in yogurt and vanilla, and refrigerate until cold. Process in an ice cream maker according to manufacturer’s instructions. Garnish with fresh fruit or drizzle with a fruit sauce.
Fruit and Honey Pops
Makes 12 popsIngredients:
2-1/4 cups water
3/4 cup honey
3 cups assorted diced or sliced fruit
12 Popsicle molds
12 Popsicle sticksDirections:
Whisk together water and honey until well blended. Evenly divide fruit among Popsicle molds and fill with honey water. Freeze for about 1 hour to partially harden. Insert Popsicle sticks and freeze until firm and ready to serve.
