Wonton Soup

Makes 8 servings

Ingredients:
1/2 pound boneless pork loin, coarsely chopped
2 ounces peeled shrimp, finely chopped
1 teaspoon brown sugar
1 tablespoon Chinese rice wine
1 tablespoon soy sauce
1 teaspoon finely chopped green onion
1 teaspoon chopped fresh ginger root
24 wonton wrappers
3 cups reduced-sodium chicken stock
1/8 cup finely chopped green onion

Directions:
1. Mix together pork, shrimp, sugar, wine, soy sauce, 1 teaspoon green onion and ginger. Combine well and set aside for 30 minutes for flavors to blend.

2. Spoon about 1 teaspoon of the pork mixture into the center of each wonton wrapper. Moisten edges of wrappers with water. Fold two corners over to make a triangle and fold over the other corners to seal all edges. Moisten edges with water, if needed, to help seal.

3. Bring chicken stock to a boil. Place wontons in boiling stock and cook for 5 minutes. Garnish bowls with green onions.
