Fortune Cookies

Makes 6 servings

Ingredients:
Small strips of paper
1 egg white
1/8 teaspoon vanilla extract
1/4 cup unbleached all-purpose flour
1 pinch salt
1/4 cup white sugar

Directions:
1. Preheat oven to 400 degrees F. Grease two cookie sheets. Write fortunes on strips of paper.

2. Beat egg white and vanilla until foamy. Gently mix in flour, salt and sugar. Spoon teaspoonfuls of batter on cookie sheets at least 4 inches apart, tilting batter to make circles. Do not make too many cookies at once because you will need to form them before they harden.

4. Bake cookies for 5 minutes. Remove cookies with a spatula and flip over on a flat surface. Place the fortune on the center of the cookie. Fold one edge over the other to seal and fold cookie in half. Place folded cookies into a muffin tin to hold shape. Cookies will harden as they cool.
