Ingredients

  • 2 tablespoons butter
  • 1 onion, chopped
  • 2 celery stalks (chopped)
  • 3 carrots (chopped)
  • 1 teaspoon ground cinnamon
  • 2 teaspoons salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1 1/2 cups lentils
  • 8 cups water
  • 2 large tomatoes (diced)
  • 1 (15 ounce) can chickpeas

Directions

  1. Melt butter in a large stock pot over medium heat.
  2. Add onion, celery and carrots and cook for 10-15 minutes, stirring occasionally.
  3. Add seasonings and lentils, along with water and bring to a boil.
  4. Reduce heat and simmer until lentils are tender (approximately 20-30 minutes).
  5. Add tomatoes and drained chickpeas, then simmer 5 additional minutes.
  6. Serve hot with a crusty bread.
