Beer Battered Chicken Fingers
Serves 12
Ingredients:
6 cups oil for frying
2 cups all-purpose flour
2 teaspoons baking powder
4 eggs, beaten
1 cup cold beer
1 cup all-purpose flour
3 pounds boneless skinless chicken breast halves sliced into 1-inch pieces
Directions:
1. Heat oil in a deep fryer or deep skillet until it is 375 degrees F. In a wide shallow bowl, combine 2 cups of flour with baking soda. Mix in eggs and beer. Place the remaining 1 cup of flour in a separate bowl.
2. Dredge chicken strips in flour then dip in beer mixture. Place in hot oil and cook until golden brown, flipping as needed, about 6 to 8 minutes. Continue with all chicken until finished. Transfer to paper towels to drain. Serve with spicy mustard or blue cheese dipping sauce.

Serves 10
Ingredients:
1 pound extra sharp cheddar cheese, cut up
1 (10-ounce) can diced tomatoes and green chilies, undrained
1 cup shredded low-moisture part-skim mozzarella cheese
8 ounces ground beef, cooked, drained
1/2 cup sliced green onions (white and green parts)
Directions:
Combine all ingredients except green onions in a large microwavable bowl. Cook on high for 3 minutes, stir, and continue to cook for 2 minutes or until cheeses are fully melted. Remove from microwave and top with onions. Serve with chips, crackers, or toasted hamburger buns.

Raspberry Beer Cocktail
Serves 12
Ingredients:
1-1/2 cups raspberries, fresh or frozen, thawed
7 (12-ounce) bottles of chilled beer
2 (12-ounce) containers frozen raspberry lemonade concentrate, thawed
1 cup vodka
Directions:
Mash raspberries in a bowl and place in a large pitcher. Add beer, concentrate and vodka and stir until combined. Pour into beer steins over ice and garnish with extra raspberries.
