Guinness braised corned beef casserole

Serves 6-8

Ingredients:

  • 2 cups water
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1 cup chopped celery
  • 1 cup Irish stout (like Guinness)
  • 2/3 cup packed brown sugar
  • 1/4 cup tomato paste
  • 1 tablespoon dried dill
  • 1 (14-1/2-ounce) can low sodium beef broth
  • 8 black peppercorns
  • 3 whole cloves
  • 3 pounds corned beef brisket, trimmed of excess fat
  • 1 cup Irish cheddar cheese, grated

Directions:

  1. Add water, onion, carrots, celery, stout, brown sugar, tomato paste, dill, broth, peppercorns and cloves to a large crock-pot. Stir ingredients well and add in brisket.
  2. Cook on low for 8 hours or high for 4 hours, or until beef is tender and cooked through. Towards the end of the cooking time, preheat oven to 350 degrees F.
  3. Remove beef and slice thinly. Arrange in a large casserole dish and top with broth and vegetables. Sprinkle with cheese and bake in oven until cheese is melted, about 10 minutes.
