About Chef Carlos Jorge and Solu

Celebrating the cuisine of the sun and sea, Solu takes diners to the Far-East and the Caribbean islands without leaving the country. Chef Carlos Jorge, an alum of the Raleigh Hotel on South Beach
where he worked with acclaimed chef Eric Ripert, and Mercer Kitchen and Butter in New York City, combines his Puerto Rican heritage with his own blend of Asian-inspired flavors.

Some of Solu’s specialty dishes are fresh fish ceviches, seared Florida grouper with a spicy Caribbean sancocho broth, and plantain mofongo. Chef Jorge focuses mostly on seafood, as he is
close enough to the source, that he can get first-rate fresh fish and shellfish on a daily basis. The rest of the ingredients for his seasonal menu come from the local West Palm Beach GreenMarket
and local farmers and artisan suppliers.

Chef Jorge says his menu is “inspired by flavor combinations I was brought up with. I tweaked and refined dishes I remember as a child, especially the rustic fair that I grew up
eating.”

Another inspiration for his menus is “travel, living by the ocean, and living on the beach.” Chef Jorge says “I believe food is art, just a different medium, so all different
things give me ideas on what dishes to create. You just have to look around and you will be inspired.”

Although Chef Jorge is a world-class chef, he shares one secret of his success for the aspiring home cook. “Never follow a recipe. If you do, you have to taste, taste, taste because along the
way, you can find a completely different destination and make the recipe your own.”
