Cuban-Style Burger
Makes 4 burgersIngredients:
1/2 cup mayonnaise
Juice of 1 lime
1 tablespoon ground cumin
2 pounds ground pork
2-1/2 teaspoons grill seasoning
9 ounces grated manchega cheese
6 crispy Cuban style rolls (or enclose in empanada dough)Directions:
1. Whisk together mayonnaise, lime and cumin in a small bowl. Combine ground pork with seasoning and shape mixture into 4 patties.2. Cook patties in a skillet or in a grill pan until cooked through. When burgers are almost finished, sprinkle cheese on top and cover skillet or grill pan for 1 minute to melt cheese.3. Spread mayonnaise mixture onto rolls and top with burger patties. Add onion slices and spinach leaves, if desired. Serve immediately.
Greek-Style Burger
Makes 4 burgersIngredients:
1 small onion, finely chopped
2 cloves garlic, finely chopped
2 tablespoons chopped fresh mint
4 teaspoons chopped fresh oregano
1 tablespoon fresh lemon juice
1-1/4 pounds ground lamb
Salt to taste
Freshly ground black pepper to taste
4 pita pockets
2/3 cup nonfat plain yogurt
2 teaspoons chopped garlic
2 teaspoons Dijon mustard
1 teaspoon honey
1/2 cup peeled, seeded, and diced cucumber
3 cups arugula
1 medium tomato, thinly sliced
1 red onion, thinly sliced
1/3 cup crumbled fetaDirections:
1. Combine onion, garlic, mint, oregano, lemon juice, lamb, salt and pepper in a bowl and mix well. Shape meat into 4 patties.2. Cook burgers in a skillet or in a grill pan until cooked through. Meanwhile, heat pitas in the oven until warm but not crispy.3. Whisk yogurt with garlic, mustard, honey, cucumber, salt and pepper in a small bowl.4. Spoon yogurt mixture in warm pitas. Nestle burgers in pita pockets and add arugula, tomato, onion and feta. Serve warm.
Asian-Style Burgers
Serves 4Ingredients:
1-1/2 pounds ground beef
2 scallions, finely chopped
1 heaping tablespoon minced fresh ginger
2 garlic cloves, minced
3 tablespoons minced cilantro
1 Thai chili, seeded, minced
1-1/2 tablespoons toasted sesame oil
1/2 cup mayonnaise
2 teaspoons wasabi paste
4 sesame hamburger buns, toasted
Thinly sliced red onionDirections:
1. In a bowl, combine beef, scallions, ginger, garlic, cilantro, chili and sesame oil. Form into 4 patties. Cook burgers in a skillet or grill pan until cooked to desired doneness.2. Whisk together mayonnaise and wasabi. Spread wasabi mayonnaise on buns and place burger on bottom half of buns. Top with onion and remaining half of bun. Serve immediately.
