Beyond cookies: Chocolate chip recipes

Mom’s homemade chocolate chip cookies are probably the best thing ever, but chocolate chips can do so much more than cookies – they can be used in cakes, cupcakes, muffins, scones and more. There is even a day dedicated to this very versatile ingredient. May 15 is National Chocolate Chip Day, giving you the opportunity to celebrate a few delicious and sweet chocolate chip treats for breakfast, lunch and dinner.

Chocolate Chip Scones

Makes 12 sconesChocolate chips are indulgent little surprises in this breakfast scone. Pair with a hot cup of espresso and you’ve got one mouthwatering way to start your day.Ingredients:
1-3/4 cups all-purpose flour
1/3 cup granulated sugar
2 teaspoons baking powder
1/2 teaspoon salt
5 tablespoons unsalted butter, cubed
3 tablespoons fresh orange juice
1/2 cup miniature semisweet chocolate chipsDirections:
1. Preheat oven to 400 degrees F. and coat a baking sheet with cooking spray. Combine flour, sugar, baking powder and salt in a small bowl.2. Cut butter into flour mixture with two knives or a pastry cutter until the mixture resembles crumbs. Pour orange juice into mixture and stir until a dough is made.3. Stir in chocolate chips until fully combined. Place dough on a floured surface and roll into a circle that is about 1/2-inch thick. Cut out scones with a round or triangular-shaped cookie cutter.4. Place scones on prepared cookie sheet and bake 10 to 12 minutes or until golden. Let cool on wire racks and serve with butter and jam.

Chocolate Chip Bread

Makes 1 loafSurprise your palate with a piece of this heavenly bread at your next lunchtime meal. Use it to make a sandwich (see recipe below) or toast a slice to partner with a spinach strawberry feta salad.Ingredients:
1/4 cup water
1 cup whole milk
1 egg
3 cups bread flour
3 tablespoons light brown sugar
2 tablespoons granulated sugar
1 teaspoon salt
1 teaspoon cinnamon
1-1/2 teaspoons active dry yeast
2 tablespoons unsalted butter, softened
3/4 cup semisweet chocolate chipsDirections:
Combine all ingredients except for chocolate chips in a bread machine and follow the manufacturer’s instructions for a standard loaf of bread. Add chocolate chips just before kneading is finished. Let cool when finished baking then slice and serve.

Chocolate Chip and Nutella Sandwich

Makes 1 sandwichIngredients:
2 tablespoons cream cheese, softened
2 slices chocolate chip bread (see recipe above)
1 tablespoon mini chocolate chips
2 tablespoons Nutella
1/2 banana, slicedDirections:
1. Spread 1 tablespoon of cream cheese on each slice of bread. Sprinkle chocolate chips on each side and gently press down.2. Spread 1 tablespoon of Nutella on top of chocolate chips and top with sliced bananas. Place slices of bread together with filling on the inside and cut in half to serve.

Chocolate Chip Bundt Cake

Makes 12 servingsOne scrumptious slice of this chocolaty cake will bring a special end to any meal.Ingredients:
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup unsalted butter, softened
2 cups granulated sugar
3 teaspoons vanilla extract
4 eggs
3/4 cups low-fat milk
12 ounces semisweet chocolate chips
Confectioners’ sugar, for dustingDirections:
1. Preheat oven to 325 degrees F. and coat a bundt pan with butter and flour. Combine flour, baking powder, and salt in a small bowl.2. In a large bowl, beat butter with sugar until creamy. Beat in vanilla and eggs one at a time until fully combined.3. Beat dry mixture into wet mixture gradually until well combined and then beat in milk. Stir chocolate chips into batter and pour into prepared pan.4. Bake 70 minutes or until a toothpick inserted in the center comes out clean. Let cool on a wire rack and dust with confectioners’ sugar when ready to serve.
