Strawberries are in season from late spring through most of summer, making May the perfect time to honor this antioxidant-rich, ruby-colored fruit. May is National Strawberry Month and the following strawberry recipes will give you delicious reason to celebrate.
National Strawberry Month recipes
Strawberry French Toast
Makes 10 to 12 servings
Ingredients:
3 ounces cream cheese, softened
1 (12- to 16-inch) loaf French bread, sliced into 1-inch rounds
1/2 cup fresh strawberries, sliced
4 eggs, beaten
1 cup half-and-half
1 teaspoon ground cinnamon
1 teaspoon granulated sugar
Directions:
1. Preheat oven to 350 degrees F. Grease a 9×13-inch pan with butter or cooking spray. Spread cream cheese on bread slices and arrange bread in prepared pan with the cream
cheese side up.
2. Place strawberries on top of each piece of bread. In a bowl, whisk eggs with half-and-half, cinnamon and sugar. Pour mixture over bread and cover with aluminum foil.
3. Bake for 30 minutes then remove foil and bake another 30 minutes. Serve immediately and dust with powdered sugar.
Note: This can be made one day in advance and kept in the refrigerator until ready to bake.
Arugula and Strawberry Salad
Makes 8 servings
Ingredients:
2 bunches arugula, rinsed and shredded
4 cups sliced strawberries
1/2 cup crumbled feta
1/2 cup extra-virgin oil
1/4 cup white wine vinegar
1/2 cup granulated sugar
1/4 teaspoon paprika
2 tablespoons sesame seeds
1 tablespoon poppy seeds
Directions:
Combine arugula, strawberries and feta in a large bowl. Whisk oil, vinegar, sugar, paprika, sesame seeds and poppy seeds in a small bowl. Pour dressing over salad and gently
toss before serving.
Strawberry Peanut Butter Blondies
Makes 10 to 12 servings
Ingredients:
3/4 cup unsalted butter, softened
3/4 cup peanut butter
1 cup packed light brown sugar
1/2 cup granulated sugar
2 teaspoons baking powder
1/4 teaspoon salt
2 eggs
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 cup strawberry jam
4 cups quartered strawberries
Directions:
1. Preheat oven to 350 degrees F. and grease a 9×13-inch pan with butter or cooking spray. Beat butter and peanut butter in a large bowl then beat in brown sugar, granulated
sugar, baking powder and salt. Beat eggs in one at a time and then beat in vanilla and flour.
2. Pour half of the batter into prepared pan. Spread jam over batter and then top with the remaining batter. Bake 25 minutes or until a toothpick comes out clean. Remove pan and let cool. Top with
sliced strawberries and slice into squares.
