Cucumber Mojito
Makes 4 cocktails
Ingredients:
2 cups cold water
1 cup diced fresh cucumber
1/4 cup granulated sugar
1/4 cup fresh lime juice
12 fresh mint leaves
3/4 cup white rum
1 cup tonic water, chilled
4 fresh mint sprigs
4 fresh cucumber slices
4 fresh lime wedges
Directions:
1. Combine cold water and cucumber in a blender and blend until smooth. Strain mixture through a fine sieve or cheesecloth and discard seeds and flesh.
2. Combine sugar, lime juice and mint leaves in a pitcher and muddle (mash together) with a wooden spoon.
3. Pour rum and cucumber mixture into the pitcher and stir well. Top with tonic.
4. Add ice to 4 serving glasses and pour cocktail mixture into glasses. Garnish with mint sprigs, a cucumber slice and lime wedge.
Tequila Red
Makes 4 cocktails
Ingredients:
8 ounces white tequila
1/4 cup fresh lime juice
2-1/2 cups fresh grapefruit juice
4 grapefruit wedges
Directions:
1. Combine tequila, lime juice and grapefruit juice in a pitcher.
2. Add ice to 4 glasses and pour cocktail mixture into glasses. Garnish with grapefruit wedges.
Gin Julep
Makes 4 cocktails
Ingredients:
1 cup water
1 cup granulated sugar
8 to 10 fresh mint leaves, torn
1 cup gin
Fresh mint sprigs
Directions:
1. Combine water and sugar in a pot and heat over medium heat until sugar dissolves and mixture is syrupy. Remove pot from heat and stir in mint leaves, and let steep for 15 to
20 minutes. Strain mixture and chill until ready to use.
2. Combine mint syrup and gin in a pitcher. Add ice to 4 glasses and pour cocktail mixture over ice. Garnish with mint springs.
