You’ve forgotten about your simmering steamer full of cauliflower, broccoli and carrots, and now have an assortment of mushy, pale veggies. No way can you serve something that is more akin to
baby food than a colorful crisp-tender vegetable side dish, but not all is lost.
Food fix #2: Make creamy vegetable soup
Saute minced onion and garlic in a saucepan with olive oil. Add herbs and spices of your choice and heat. Put overcooked vegetables and onion mixture in a food processor or blender and puree,
adding vegetable broth as needed. Transfer puree back to saucepan and bring to a simmer, stirring in cream or even sour cream. Adjust seasoning and serve, garnished with grated Parmesan, a drizzle
of olive oil, and a bit of minced herbs.
Give one of these low-fat creamy soups a taste.
