Holiday food disaster #3: Paltry potatoes

The substantial amount of potatoes you bought suddenly seem a measly bunch and certainly won’t amount to enough mashed potatoes for the crowd you have in wait for the holiday feast.

Food fix #3: Cheesy Scalloped Potatoes

Thinly slice potatoes and layer them in a baking dish with generous amounts of cheese and thinly sliced onions, ending with a layer of cheese on top. Pour over a little milk or cream, cover and
bake at 350 degrees F. for 35 to 40 minutes. Uncover and cook another 10 to 15 minutes or until cheese is bubbly and lightly browned. If you happen to have extra sweet potatoes on hand, thinly
slice them and layer with the baking potatoes for a multicolored scalloped potato dish.
