Holiday food disaster #7: Coffee conundrum
The holiday dinner has ended — or perhaps your holiday guests are clamoring at the breakfast table the morning after — and you realize you don’t have enough coffee to go around. Decaf is
out of the question, as is making a weak brew.
Food fix #7: Stretch your coffee
As you are clearing the table to make room for dessert, surprise your guests with the option of having a sweet coffee cocktail in place of — or paired with — the pumpkin pie (or pumpkin
pudding!). To satisfy the early morning coffee drinkers, simply make a mocha.
Creamy Coffee Cocktail: Make a strong 8-cup pot of coffee. Stir in 1/2 to 3/4 cup flavored creamer or cream, 2 teaspoons vanilla extract, and 1/2 cup Amaretto, Gran Marnier or
spiced rum. Pour into demitasse cups (which are smaller and will entice your guests to sip, not guzzle) and top off with a dollop of whipped cream and a dash of cocoa powder or cinnamon.
Spicy Café Mocha: Warm 2 cups of milk in a saucepan and add 1/3 cup cocoa powder, 1/4 cup sugar, and 1/2 teaspoon ground cinnamon. Stir in 2 to 3 cups of strong brewed
coffee. (Adults can add a shot of brandy or rum.) Serve topped with marshmallows or whipped cream and a dash of freshly ground nutmeg.
