Hanukkah, also known as the Festival of Lights, is as much about food as any other holiday. For this year’s eight day celebration, give these updated Hanukkah recipes a taste.

Baked Zucchini Latkes

Makes 4 to 6 servings

Ingredients:

4 cups zucchini, grated

1 medium sweet potato, grated

1 medium white onion, chopped

3 eggs, beaten

3 tablespoons all purpose flour

2 tablespoons breadcrumbs

1/4 teaspoon salt

Fresh ground pepper, to taste

Garlic powder, to taste

Cheddar cheese sour cream (recipe below)

Directions:

1. Preheat oven to 350 degrees F. Cover a baking sheet with aluminum foil.

2. Combine zucchini with potatoes and onions. Stir eggs into mixture.

3. In a separate bowl, combine flour with breadcrumbs, salt, pepper and garlic powder. Add flour mixture to zucchini and mix until well combined.

4. Shape mixture into 3- to 4-inch patties, place on baking sheet, and gently flatten with palm of hand. Bake latkes for 15 to 20 minutes or until cooked through and crispy. Serve with Cheddar Sour
Cream.

Cheddar Sour Cream

Makes 4 to 6 servings

Ingredients:

2 cups sour cream

1 teaspoon hot sauce

1-1/2 cups shredded Cheddar cheese

Directions:

Combine sour cream and hot sauce. Spoon into a bowl and sprinkle cheese on top.

Cranberry Noodle Kugel

Makes 8 servings

Ingredients:

8 ounces lasagna noodles

1 cup dried cranberries

5 large eggs

1 cup sour cream

1 stick unsalted butter, melted, cooled

1/3 cup granulated sugar

4 cups whole milk

3 cups breadcrumbs

1/4 cup dark brown sugar

Directions:

1. Preheat oven to 350 degrees F. Coat a 9×13-inch dish with cooking spray.

2. Cook noodles until al dente. Drain and arrange noodles on the bottom of the prepared dish. Sprinkle half of the cranberries over noodles.

3. Beat eggs with sour cream, butter, sugar and milk. Pour mixture over noodles. Combine breadcrumbs with brown sugar and sprinkle overtop.

4. Bake for 50 to 60 minutes or until cooked through and golden on top. Remove kugel from oven and let sit for a few minutes before serving.

Chocolate Chip Rugelach

Makes 3 dozen

Ingredients:

2 cups all purpose flour

1/2 cup plus 2 tablespoons granulated sugar

1/4 teaspoon salt

1 cup (2 sticks) chilled unsalted butter, diced

6 ounces chilled cream cheese, diced

1 teaspoon ground cinnamon

8 tablespoons semisweet chocolate chips

8 tablespoons finely chopped walnuts

1/3 cup whipping cream

Directions:

1. Combine flour with 2 tablespoons sugar and salt in a food processor. Add butter and cream cheese and process until a soft dough forms. Form dough into 4 balls, wrap in
plastic wrap, and chill about 2 hours.

2. In a small bowl, combine cinnamon and 1/2 cup sugar. Roll out one dough ball on a lightly floured surface, forming a circle. Sprinkle 1/4 of the chocolate chips, 1/4 of the nuts over dough
and 1/4 of the cinnamon sugar.

3. Slice dough into 9 equal triangles. Roll each triangle form the widest part to the smallest part and place on a baking sheet. Repeat with all triangles. Repeat entire process with remaining
dough, chocolate chips, nuts and cinnamon sugar.

4. Brush triangles with whipped cream and chill while preheating oven to 375 degrees F. Bake for 30 to 35 minutes or until golden on top. Let cool on wire racks.
