Instead of the same old corned beef and cabbage this St Patrick’s Day, how about trying a menu of traditional Gaelic foods that any Irish person would enjoy on the green- and clover-themed holiday? This hearty set of St Patty Day dishes is out of the ordinary and can set the stage for a brand new way to celebrate this annual celebration of everything Irish.
Gaelic St Patrick’s Day Menu
Beer-Braised Brisket
Serves 8
Ingredients:
1 (6-pound) beef brisket, trimmed of fat
1 tablespoon dark brown sugar, packed
3 whole cloves
24 ounces beer or ale
1-1/2 cups plus 1 teaspoon water
1 pound carrots, peeled and trimmed
1 pound parsnips, peeled and trimmed
2 tablespoons butter
2 tablespoons fresh parsley, chopped
1 tablespoon cornstarch
1 teaspoon red wine vinegar
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
Directions:
1. Place brisket in large Dutch oven and sprinkle with sugar and cloves. Pour beer and 1-1/2 cups water over brisket and cover. Simmer over low heat until beef is tender when
pierced with a fork, about 2-1/2 hours. Turn beef twice during cooking.
2. Add carrots and parsnips after the beef has cooked for 1 hour. When done, remove beef from pot and keep warm. Cut carrots and parsnips lengthwise into quarters and toss with parsley and butter.
Keep warm.
3. Skim fat from pan juices, and measure out 2 cups of juices. Mix cornstarch, 1 teaspoon water, vinegar, salt and pepper. Whisk pan juices and cornstarch mixture in a small saucepan.
4. Bring to a boil, stirring constantly, and boil 1 minute. Pour into gravy boat and serve with the vegetables and brisket.
Spinach pie
Serves 8
Ingredients:
Butter and flour for pie pan
2 slices bacon, cut into 1-inch pieces
1 small onion, chopped
2 large eggs
1/2 cup heavy cream
1 teaspoon dried basil
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 (10-ounce) packages frozen spinach, chopped and thawed
Directions:
1. Preheat oven to 350 degrees F. Butter and flour a 9-inch tart pan with removable bottom.
2. Over medium heat, saute bacon and onion in a small skillet until bacon is crisp and onion is golden. Whisk eggs, cream, and spices in mixing bowl. Squeeze liquid from the spinach.
3. Stir spinach and the bacon mixture into the egg mixture. Spread evenly in the prepared tart pan and place pan on a baking sheet.
4. Bake until a knife inserted in the center comes out clean, about 25 minutes. Remove side of pan and cut pie into 8 wedges. Serve immediately.
Potato Oat Cake
Serves 8
Ingredients:
2 pounds white potatoes, pared
1 medium onion
1/2 cup rolled oats
4 large eggs, lightly beaten
1 teaspoon salt
1/4 teaspoon each caraway seeds and freshly ground black pepper
1 tablespoon extra-virgin olive oil
Directions:
1. Grate potatoes and onion and squeeze out extra liquid. Combine potatoes, onion and all ingredients but the oil in a mixing bowl.
2. Heat oil in a 10-inch non-stick skillet over medium-high heat. Spread potato mixture evenly in skilled. Reduce heat to medium, cook covered until top is nearly set and bottom is lightly browned.
3. Turn cake over on a platter and return to the skillet. Cook until bottom is golden brown. Cut in 8 wedges and serve hot.
Irish Whiskey Parfaits
Serves 8
Ingredients:
6 large egg yolks
1/2 cup granulated sugar
1/4 cup Irish whiskey
2 cups heavy cream
1/4 cup powdered sugar
1 teaspoon vanilla extract
1/4 cup raspberry preserves
Directions:
1. Beat egg yolks in mixer bowl, gradually adding granulated sugar. Continue beating until mixture is thick and pale. Beat in whiskey gradually. Transfer to a large bowl.
2. Beat cream, powdered sugar and vanilla in a clean mixer bowl until stiff. Gently fold whipped cream 1/3 at a time, into egg yolks.
3. Spoon cream mixture alternating with thin layers of preserves, into parfait glasses. Freeze at least 4 hours or overnight.
Not your average St Patrick’s Day menu, but these dishes will give a little more traditional feel to your Irish celebration, and you may find you like them so well, you want to make them throughout
