Fennel and Parmesan Risotto

Makes 4 to 6 servings

Ingredients:
1 tablespoon butter
1 white onion, chopped
1 red bell pepper, seeded, chopped
4 fennel bulbs, sliced in 1/4-inch thick slices
2 cups uncooked arborio rice
7 cups low-sodium vegetable broth
1 cup heavy cream
6 tablespoons grated Parmesan cheese
1 tablespoon minced fresh mint
Black pepper to taste

Directions:
1. Melt butter in a skillet over medium high heat and saute onions, red pepper and fennel until just tender.

2. Add rice and stir for 2 minutes. Pour in 1 cup of broth and cook until the liquid is fully absorbed. Continue adding liquid in 1 cup intervals until all liquid absorbs into rice adding more or less liquid if necessary.

3. When all the broth is absorbed, stir in cream, Parmesan and mint. Stir well until combined and heated through. Season to taste with pepper and serve hot.

Roasted Scallops with Fennel

Makes 4 servings

Ingredients:
2 fennel bulbs, cut into 1/2-inch wedges
1 red onion, cut into 1/2-inch wedges
6 cloves garlic, smashed
1 cup cherry tomatoes
1/2 bunch fresh rosemary sprigs
Salt and pepper to taste
2 teaspoons extra virgin olive oil
12 ounces large scallops
1 tablespoon fresh lemon juice

Directions:
1. Preheat oven to 400 degrees F and line a roasting pan with aluminum foil.

2. Arrange fennel, onion, garlic, tomatoes and thyme in pan. Season with salt and pepper. Drizzle oil over vegetables and toss. Roast in oven for 20 minutes or until tender.

3. When vegetables are finished, add scallops to pan. Season with salt and pepper and drizzle with lemon juice. Cook 10 to 15 minutes or until salmon is flaky.

Baked Fennel

Makes 4 servings

Ingredients:
1 tablespoon butter
2 fennel bulbs, sliced into 1/4-inch thick slices
3/4 cup half and half
3/4 cup cream cheese
1/4 cup shredded mozzarella cheese

Directions:
1. Preheat oven to 400 degrees F. Melt butter in a skillet and add fennel, sauteing for to 5 to 7 minutes.

2. Stir in the half and half and cream cheese. Saute until well combined. Spoon mixture into a baking dish and sprinkle with mozzarella.

3. Bake for 30 to 35 minutes or until fennel is tender and cheese is melted.
