Raspberry almond yogurt dip
(serves 12)
A favorite of kids and adults alike.
Ingredients:
1 cup fresh or frozen raspberries (thawed if using frozen)
1/3 cup honey
1 (8-ounce) package neufchatel cheese, softened
1 (8-ounce) carton plain yogurt, regular or low-fat
1/2 teaspoon almond extract
Directions:
1. Press raspberries through a sieve to remove seeds. Add honey to raspberry pulp in medium mixing bowl; stir to combine. Add neufchatel cheese, yogurt and almond extract. Use a hand mixer to blend ingredients on low speed.
2. Chill dip for at least 30 minutes, and stir just before serving.
*Suggested dippers: Graham cracker quarters, Nilla Wafers, cut-up fruit
