Replace ribs with pulled pork
Ribs are classic BBQ fare, but they’re loaded with fat. You can satisfy your guests’ pork cravings with this scrumptious pulled pork sandwich made from a much leaner cut of meat… and no one will miss the grease.
Pulled pork sandwiches
(serves about 20)
Ingredients:
5 pounds pork loin roast
Kosher salt and freshly ground black pepper
2 tablespoons olive oil
2 large onions, peeled, thinly sliced
2 cloves garlic, peeled and crushed
1 bay leaf
1/4 cup brown sugar
2 tablespoons honey
1/4 cup strong brewed coffee
1 (12-ounce) bottle of beer
1 (14-ounce) bottle of BBQ sauce
Sandwich rolls to serve
Directions:
1. Sprinkle the pork loin on all sides with salt and pepper. Heat a large, heavy-bottomed skillet with deep sides (or a Dutch oven) over medium-high heat. When hot, add 2 tablespoons olive oil. Using tongs, carefully lower the meat into the oil and brown on all sides, turning with the tongs.
2. Place browned roast in slow cooker set to high. Add sliced onions, garlic, and bay leaf. Sprinkle brown sugar over and drizzle with honey. Pour coffee and beer over. Cover and cook 6 to 8 hours, until meat begins to fall apart when prodded with a fork.
3. Use two forks to shred meat in liquid. Add BBQ sauce to meat and toss with tongs. Serve hot on rolls.
