Replace buffalo wings with fiery boneless chicken skewers

All that’s missing from these easy-to-eat chicken appetizers are the bones. These swoon-worthy snacks give you the best part of the Buffalo wings without the hassle. What’s not to love?

Fiery boneless chicken skewers

(serves about 12)

Ingredients:
3 pounds chicken tenders, or chicken breasts cut into 1-inch-thick strips
24 (12-inch) bamboo skewers, soaked for 30 minutes
12 ounces chicken stock or low-sodium chicken broth
1/4 cup hot sauce such as Frank’s Red Hot
1/4 cup butter
1/2 teaspoon cayenne pepper
Dash garlic powder

    Directions:
    1. In a small saucepan, combine chicken stock, hot sauce, butter, cayenne pepper and garlic powder over medium heat. Bring to a boil, reduce heat, and simmer, stirring, for about 25 minutes, until the mixture reduces to almost half and the consistency is thick and saucy. Taste and add salt if necessary.

    2. While sauce is cooking, preheat grill. Thread chicken onto soaked skewers and grill over medium to high heat for about 6 to 8 minutes, until done and no longer pink inside, turning once. To serve, brush cooked chicken skewers with sauce and arrange on platter with bowl of remaining sauce.
