Kid-friendly Mother’s Day desserts

If your kids are old enough to help in the kitchen, but not old enough to use the oven, no-bake desserts are a perfect treat for Mother’s Day. Mom can help with these simple little indulgences or leave it up to the kids to prepare the Mother’s Day sweets.

Kid-friendly Mother’s Day dessert recipes

Strawberries and Cream

Makes 4 to 6 servings
Ingredients:
3 ounces cream cheese, very soft
1/4 cup granulated sugar
3 tablespoons milk
1 quart fresh strawberries, trimmed, rinsed and dried
1/4 cup semisweet chocolate chips

Directions:
1. If the kids are old enough to use an electric beater, let them beat the cream cheese, sugar and milk until smooth. Otherwise, have them whisk ingredients together.

2. Dip strawberries into the cream cheese mixture and arrange on a baking sheet covered with wax paper. Let set for a few minutes.

3. While strawberries are setting, melt chocolate in a microwave, stirring every 30 seconds until smooth.

4. Drizzle melted chocolate over strawberries. Chill until ready to serve.

Peanut Butter Chocolate Balls

Makes 4 to 6 servings

Ingredients:
1 stick butter, softened
2 cups chunky peanut butter (softened, if refrigerated)
1 teaspoon vanilla extract
16 ounces confectioners’ sugar
12 ounces mini semi-sweet chocolate chips

Directions:
1. Let your kids stir butter, peanut butter and vanilla in a large bowl until well combined. Gradually add confectioners’ sugar, stirring to incorporate sugar into the mixture.

2. Using a small ice cream scoop, teach your kids how to make balls out of the peanut butter mixture. Roll balls in the chocolate chips and arrange on a baking sheet covered with wax paper. Chill balls until peanut butter has set or until ready to serve.

Simply Delicious Chocolate Fudge

Makes 4 to 6 servings

Ingredients:
1 pound confectioners’ sugar
1/2 cup cocoa powder
1/4 teaspoon salt
1/4 cup low fat milk
1 teaspoon vanilla extract
1 stick unsalted butter
1 cup chopped walnuts
1/2 cup flaked sweetened coconut

Directions:
1. Let your kids combine sugar, cocoa powder and salt in an 8-inch square microwave safe dish. Add milk and vanilla then top with butter.

2. Place pan inthe microwave and cook on HIGH for 2 minutes. Carefully remove pan from microwave and stir until well combined.

3. Mix nuts into fudge and top with coconut. Chill for at least 1 hour or until ready to serve.
