Cinnamon sugar pinwheels
Makes 24 servings
Ingredients
- 1 refrigerated Pillsbury pie crust (2 crusts per package)
- 6 tablespoons sugar
- 4 tablespoons cinnamon
- 1/2 teaspoon nutmeg
- 1/2 cup butter, room temperature
Directions
- Unroll the pie crusts according to the package directions.
- Combine the sugar, cinnamon, and nutmeg until well mixed.
- Spread 1/4 cup butter on each pie crust, all the way to the edges.
- Divide and sprinkle the cinnamon sugar mixture on top of the butter.
- Gently roll up each pie crust into the shape of a log, jelly roll style.
- Slice the cinnamon pinwheels 1/4-inch thick and place on a greased cookie sheet.
- Bake at 350 degrees F for 12 to 14 minutes.
- Remove from the oven and cool.
Mini brown sugar pies
Makes 24 servings
Ingredients
- 1 refrigerated Pillsbury pie crust (2 crusts per package)
- 1 pound light brown sugar
- 1/2 cup butter, melted
- 3 eggs, beaten
- 1 teaspoon vanilla
Directions
- Using a rolling pin, roll each crust out slightly.
- Using a 2-inch biscuit cutter, cut the mini crusts.
- Brush the inside of a mini muffin tin with butter and then carefully fit the crust rounds into the mini muffin tins.
- Brush the inside of the crust cups with a little butter.
- Combine the brown sugar, butter, eggs, and vanilla; mix until well blended.
- Fill each mini crust with 1 to 1 1/2 teaspoons brown sugar mixture.
- Bake at 375 degrees F for 12 to 15 minutes.
- Serve at room temperature.
Citrus almond cookies
Makes 36 servings
Ingredients
- 1 cup butter
- 1/3 cup powdered sugar
- 1 1/4 cups flour
- 1/2 cup cornstarch
- 1/4 teaspoon almond extract
- 1/4 teaspoon orange extract
- 1/4 teaspoon lemon extract
Glaze Ingredients
- 1 cup powdered sugar
- 1 tablespoon melted butter
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh orange juice
- Mix well and drizzle on the warm cookies.
Directions
- Preheat the oven to 350 degrees F.
- Cream the butter and sugar until fluffy.
- Sift the flour and cornstarch together and mix well with the butter and sugar.
- Add the extracts and blend thoroughly.
- Press dough through a cookie press onto a greased baking sheet. If you do not have a cookie press, dough may be chilled and rolled into small balls and flattened with a fork onto the baking sheet.
- Bake at 350 degrees F for 8 to 10 minutes, but do not brown.
- Glaze while the cookies are warm.
