Vegetable jalfrezi

Serves 4

This recipe features plenty of delicious vegetables over Seeds of Change Rishikesh Whole Grain Brown Basmati Rice.

Ingredients:

  • 2 tablespoons vegetable oil
  • 1/2 teaspoon cumin seeds
  • 2 teaspoons garlic chopped
  • 10 to 12 asparagus spears peeled and cut into 2-inch pieces
  • 10 to 12 baby corn spears cut into quarters lengthwise
  • 3 medium zucchinis washed and cut into 2-inch strips
  • 3 large portabella mushrooms sliced
  • 1 jar Seeds of Change Jalfrezi Sauce
  • 1 tablespoon cilantro, finely chopped
  • 1 package Seeds of Change Rishikesh Whole Grain Brown Basmati Rice

Directions:

  1. Heat oil in pan and sauté cumin seeds and garlic. As cumin seeds pop, add all the vegetables and sauté for 2 to 3 minutes, searing the vegetables. Add sauce and toss with vegetables, heat mixture through.
  2. Sprinkle with chopped cilantro. Serve warm over Seeds of Change Rishikesh Whole Grain Brown Basmati Rice.
