Tonight’s dinner: Creamy Pumpkin Soup

It’s Autumn! Time for warm jackets, cold hands, and pumpkin soup! There is no finer way to celebrate the end of a long day that with a bowl of this creamy, mild-tasting soup. It’s a simple recipe that can be cooked up in under 10 minutes.

Creamy Pumpkin Soup

 

2 tablespoons butter

1 onion, diced

2 stalks celery, diced

2 cups pumpkin puree (canned or fresh)

1 1/2 cups cream

salt & pepper to taste

In a large saucepan, saute the onion and celery until soft, about 3-5 minutes. Add the pumpkin puree and half of the cream to the saucepan, stirring just until steaming hot (but not boiling). Transfer mixture to a blender, and puree well to remove all vegetable chunks. Salt & pepper to taste. Serve immediately in bowls, with a splash of remaining cream on top
