Spooky Halloween treats

If you are hosting a scary Halloween party and want to serve up some frightful treats, read on for delicious Halloween recipes that will have your guests howling for more.

Cheesy Olive Eyeballs

Makes 12 servings

Ingredients:

  • 2 cups grated mozzarella cheese
  • 1/2 cup unsalted butter, softened
  • 1/2 teaspoon salt
  • 1 teaspoon paprika
  • 1 cup all-purpose flour
  • 6 ounces stuffed green olives

Directions:

  1. Preheat oven to 400 degrees F and cover a baking sheet with aluminum foil.
  2. Combine cheese and butter in a food processor or blender and pulse until combined.
  3. In a separate bowl, combine the salt, paprika and flour. Gradually add the flour mixture to the cheese mixture while pulsing and blend until combined.
  4. Take about 1 teaspoon of the cheese mixture and shape it around the olives with the olive opening facing outward to create an eyeball. Arrange olives on a prepared baking sheet.
  5. Bake 12 to 15 minutes, or until cheese has set.

Blood Dip with Severed Fingers

Makes 6 to 8 servings

Ingredients:

  • 8 medium beets, cooked, peeled, and coarsely chopped
  • 2 garlic cloves, minced
  • 1/3 cup extra-virgin olive oil
  • 2 tablespoons sesame paste
  • 3 tablespoons fresh basil leaves, minced
  • 2 teaspoons red wine vinegar
  • Juice of 1/2 lemon
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 tube refrigerated crescent roll dough
  • 12 mini hot dogs
  • 2 tablespoons ketchup
  • 1 yellow bell pepper, sliced into small triangles

Directions:

  1. Combine the beets, garlic, olive oil and sesame paste in a blender or food processor and blend until smooth.
  2. Spoon the mixture into a bowl and stir in basil, vinegar, lemon juice, salt and pepper.
  3. Arrange the dough on a flat surface and separate it into triangles. Place a hot dog on one end of each triangle and roll the dough to cover it, leaving one edge open and the other side sealed to look like a finger. Arrange hot dogs on a baking sheet and bake 15 to 20 minutes, or until the dough is flaky.
  4. Remove the hot dogs from the oven and place a small amount of ketchup and a pepper on the end of each hot dog to make a fingernail. Serve the fingers with dip.

Spooky Spiders

Makes 12 servings

Ingredients:

  • 2 ounces chocolate morsels
  • 1-1/4 cup all-purpose flour
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/4 cup plus 6 tablespoons unsalted butter
  • 1 cup granulated sugar
  • 1 egg, beaten
  • 2 teaspoons vanilla extract
  • 2-2/3 cups confectioners’ sugar
  • 6 tablespoons unsweetened cocoa powder
  • 5 tablespoons milk
  • 2 drops black food coloring
  • Red hot candies

Directions:

  1. Preheat oven to 375 degrees F.
  2. Melt the chocolate in a double boiler over low heat, stirring until smooth.
  3. Meanwhile, combine the flour with baking powder and salt. In a separate bowl, beat 1/4 cup butter with sugar then beat in egg, melted chocolate, and 1 teaspoon of vanilla. Gradually beat in the flour mixture until a dough has formed.
  4. Form dough into 12 round spider bodies, then shape 12 round heads and 8 legs for each spider. Carefully place spiders on an aluminum foil-covered baking sheet and bake 6 to 8 minutes, or until cooked through.
  5. While spiders are baking, beat confectioners’ sugar with cocoa powder, milk, 6 tablespoons of butter and 1 teaspoon of vanilla until smooth. Stir in food coloring, adding more if needed to make the color darker.
  6. When the spiders have cooled, carefully frost each one and decorate them using the red hot candies as eyes.
