Spicy Mexican Pizza

Makes 6 servings

Ingredients

  • 1, 1/4-ounce package yeast
  • 1 cup warm water
  • 2 cups bread flour
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 2 teaspoons granulated sugar
  • 1 tablespoon chili powder
  • 10 to 15 large shrimp, chopped
  • 1 package taco seasoning
  • 2 cups salsa
  • 16-ounces black beans
  • 4-ounces green chilies, diced
  • 1 avocado, sliced
  • 8-ounces queso fresco

Directions

  1. Combine yeast and warm water in a bowl and let bloom for 10 minutes.
  2. In a separate bowl, mix flour with olive oil, salt, sugar, chili powder, and yeast mixture; mix until well combined and a dough forms; cover dough and let rise for 30 minutes.
  3. Preheat oven to 400 degrees F.
  4. Sauté shrimp with taco seasoning until chicken is cooked through.
  5. When dough has risen, punch down and roll out to make a circle; place dough on a pizza pan and top with salsa, chicken mixture, beans, chilies, avocado slices, and queso fresco.
  6. Bake pizza for 15 to 20 minutes, or until dough is golden.

German Sausage & Sauerkraut Pizza

Makes 6 servings

Ingredients

  • 1, 12-ounce bottle dark beer
  • 3 1/2 cups all-purpose flour
  • 1 teaspoon salt
  • 2/3 cup extra-virgin olive oil
  • 1 large yellow onion, chopped
  • 8-ounces uncooked bratwursts, casings removed
  • 2 cups well-drained sauerkraut
  • 2 cups shredded gouda cheese

Directions

  1. Preheat oven to 400 degrees F.
  2. Combine beer with flour, salt, and olive oil until well mixed and a soft dough forms.
  3. Roll dough out into a circle and place on a pizza pan.
  4. Sauté yellow onion with bratwurst until browned.
  5. Top dough with sauerkraut then with bratwurst and onions and sprinkle with cheese.
  6. Bake pizza until cheese is melted and crust is golden, about 15 to 20 minutes.

Jamaican Jerk Chicken Pizza

Makes 6 servings

Ingredients

  • 1, 1/4-ounce package yeast
  • 1 cup warm water
  • 2 cups bread flour
  • 2 tablespoons olive oil
  • 1 1/2 teaspoons salt, plus more to taste
  • 2 teaspoons granulated sugar
  • 2 tablespoons minced red onion
  • 2 1/2 teaspoons dried thyme
  • 2 teaspoons ground allspice
  • 2 teaspoons black pepper
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped green onion tops
  • 5 small jalapeño peppers
  • 2 tablespoons olive oil
  • Splash of rum
  • 2 chicken breasts
  • 1 cup barbecue sauce
  • 1 mango, diced
  • 1/2 red bell pepper, diced
  • 1 lime, halved

Directions

  1. Combine yeast and warm water in a bowl and let bloom for 10 minutes.
  2. In a separate bowl, mix flour with olive oil, 1 teaspoon salt, sugar, chili powder, and yeast mixture; mix until well combined and a dough forms; cover dough and let rise for 30 minutes.
  3. Preheat oven to 400 degrees F.
  4. Meanwhile, in a blender, combine red onions, thyme, allspice, black pepper, cinnamon, green onions, jalapeños, olive oil, and rum; blend until well combined.
  5. Rub spice mixture over both sides of chicken and place on a grill or in a skillet; cook until no longer pink inside. When chicken is finished, dice or shred into pieces.
  6. When dough has risen, punch down and roll out to make a circle; place dough on a pizza pan and top with barbecue sauce, chicken, mango, and red pepper.
  7. Bake pizza for 15 to 20 minutes, or until dough is golden. Squeeze lime juice over the top before serving.
