Cinnamon Candy Apples
Makes 12 servings
Ingredients:
- 12 apples
- 2 cups granulated sugar
- 1 cup light corn syrup
- 1 1/2 cups water
- 1/2 cup cinnamon flavored red hot candies
- 4 drops red food coloring
- 1/2 cup ground cinnamon
Directions:
- Insert wooden skewers into top of each apple.
- Combine sugar, corn syrup, and water in a large pot and heat over medium heat. Using a candy thermometer, heat until temperature reads 300 degrees F. Remove pot from heat and add candies and food coloring, stirring until candies have melted and mixture is smooth.
- Dip apples into candy mixture then into cinnamon and place on a baking sheet covered in wax paper. Let cool until coating is hard.
Chocolate Chip Cookie Candy Apples
Makes 12 servings
Ingredients:
- 12 apples
- 2 pounds semisweet chocolate, chopped
- 1 cup chocolate chip cookies, crushed well
Directions:
- Insert wooden skewers into the top of each apple.
- Melt chocolate in a double boiler over medium heat until smooth. Remove pot from heat and dip apples into chocolate then immediately dip into cookie crumbs. Place on a baking sheet covered with wax paper.
Peanut Butter Stuffed Apples
Makes 12 servings
Ingredients:
- 12 apples
- 8 ounces, plus 2 pounds semisweet chocolate, chopped
- 1/2 cup peanut butter
- 3 cups heavy cream
- 3/4 teaspoon vanilla extract
- 3 cups salted peanuts, chopped
Directions:
- Cut out a circle at the bottom of the apples and scoop out the inside to make a deep section to fill. Save the top to cover the hole back up.
- Mix 8 ounces chocolate with peanut butter in a bowl; heat 2 cups heavy cream with vanilla over medium heat until it is hot but not boiling. Pour cream mixture over chocolate and stir until smooth. Mix 1 cup nuts in.
- Spoon chocolate-peanut butter mixture into the middle of the apples and place the top back on. Insert a wooden skewer into each end to secure top.
- Melt chocolate in a double boiler over medium heat until smooth. Remove pot from heat and dip apples into chocolate then immediately dip into nuts.
- Place apples on a wax paper covered baking sheet.
