Grilled veggie kabobs

Ingredients

  • 12 large fresh mushrooms
  • 1/4 cup Italian dressing
  • 2 tablespoons lemon juice
  • 1 1/2 teaspoons Worcestershire sauce
  • 2 medium zucchinis, cut into 1 inch diagonal slices
  • 4 cherry tomatoes
  • Boiling water
  • Skewers

Directions

  1. Place mushrooms in a medium bowl and cover with boiling water.
  2. Let stand for 1 minute then drain.
  3. Combine dressing, lemon juice and Worcestershire sauce in a small bowl.
  4. Thread alternating mushrooms and zucchini on skewers.
  5. Grill kabobs over medium heat for 10 minutes, turning frequently and brushing with dressing.
  6. Remove from heat and thread cherry tomatoes onto the ends of the skewers.
  7. Continue grilling for an additional 5 minutes, turning and brushing with remaining mixture.

Simple grilled fish recipe

Ingredients

  • 4 white fish fillets
  • 1/4 cup olive oil
  • 1 tablespoon chopped, fresh thyme
  • 1 tablespoon chopped, fresh marjoram

Directions

  1. Combine the olive oil and herbs.
  2. Rub fillets with the oil and herb combination and marinate in refrigerator for approximately 30 minutes while grill is heating.
  3. Grill for 3-4 minutes per side, or until fish flakes.

Grilled sweet potato wedges

Ingredients

  • 4 sweet potatoes
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika

Directions

  1. Peel potatoes and wash thoroughly.
  2. Cut each potato into small wedges and place in a plastic bag.
  3. Add black pepper, salt and paprika and shake the contents to thoroughly coat the potatoes.
  4. Place potatoes on grill plate and cook until tender.

Easy grilled shrimp skewers

Ingredients

  • 2 lbs shrimp
  • 1/2 cup Italian dressing
  • Skewers

Directions

  1. Clean, shell and devein shrimp.
  2. Marinate in dressing for one hour at room temperature.
  3. Thread shrimp on skewers.
  4. Place skewers on grill, turning and basting with dressing several times.
  5. Cook until done (about 4-5 minutes); do not overcook since shrimp will become tough.

Grilled lamb cutlets with dip

Ingredients

  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • 2 cloves crushed garlic
  • 1 teaspoon dried rosemary
  • Cracked pepper

Dip

  • 1 small container ricotta cheese
  • 1 teaspoon extra virgin olive oil
  • 1 teaspoon dried mint
  • Cracked pepper
  • Salt

Directions

  1. Place lamb cutlets in a dish.
  2. Mix remaining ingredients in a small bowl and pour over lamb, coating evenly.
  3. Refrigerate and let marinate for 2 hours.
  4. Grill cutlets on high for 2 to 3 minutes on each side.
  5. Serve with dip.
