Fudgy Brownies

Makes 24 brownies

Ingredients:

  • 1 cup unsalted butter, melted
  • 2 cups granulated sugar
  • 4 whole eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup unsweetened cocoa powder
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder

Directions:

  1. Preheat oven to 350 degrees F and coat an 9 x 13-inch baking pan with cooking spray.
  2. Combine butter with sugar, eggs, and vanilla and whisk until well combined.
  3. In a separate bowl, combine cocoa powder with flour, salt, and baking powder; gradually beat flour mixture into egg mixture and beat until batter is smooth; pour batter into pan and bake 25 to 30 minutes, or until a toothpick comes out clean.

Peanut Butter Swirl Brownies

Makes 12 brownies

  • Ingredients:
  • 1/2 cup smooth peanut butter
  • 1/3 cup unsalted butter, softened
  • 2/3 cup granulated sugar
  • 1/2 cup packed light brown sugar
  • 2 whole eggs
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/4 cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Directions:

  1. Preheat oven to 350 degrees F and grease an 8 x 8-inch baking pan with cooking spray.
  2. Beat peanut butter and butter until combined; beat in both sugars, eggs, and vanilla until smooth.
  3. In a separate bowl, combine flour with cocoa powder, baking powder, and salt; gradually beat flour mixture into butter mixture until smooth; pour batter into pan and bake 25 to 30 minutes, or until a toothpick comes out clean.

Mint Frosted Brownies

Makes 24 brownies

Ingredients:

  • 1/2 cup unsalted butter, melted
  • 1/2 cup unsweetened cocoa powder
  • 1 1/2 cups granulated sugar
  • 3 eggs
  • 1 1/2 teaspoons vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 cup unsalted butter, softened
  • 2 1/2 cups confectioners’ sugar
  • 2 tablespoons milk
  • 1/2 teaspoon peppermint extract
  • A few drops of green food coloring

Directions:

  1. Preheat oven to 350 degrees F and grease a 9 x 9-inch baking pan with cooking spray.
  2. Beat melted butter with cocoa powder, sugar, eggs, and vanilla extract until well combined.
  3. In a separate bowl, combine flour with salt and gradually beat into butter mixture; pour batter into pan and bake 20 to 25 minutes, or until a toothpick comes out clean.
  4. Remove brownies from oven and let cool. While brownies are cooling, beat butter with confectioners’ sugar until smooth; beat in milk and peppermint extract until well combined then add a few drops of food coloring.
  5. When brownies have cooled, spread mint frosting on top of the brownies.
