Citrus grilled salmon steak recipe
Serves 4
Ingredients:
- 1 orange, juiced
- 1 lemon, juiced
- 1 grapefruit, juiced
- Salt and pepper
- 1 tablespoon olive oil
- 1 teaspoon Dijon mustard
- 4 salmon steaks
Directions:
- Whisk orange juice, lemon juice and grapefruit juice with salt, pepper, oil and mustard.
- Marinate salmon in citrus juices for 30 minutes to 1 hour.
- When ready to cook, oil grill grates and heat grill to medium heat. Place salmon on grill and shut lid.
- Grill about 10 minutes per side. Remove salmon and garnish with a lemon wedge.
Herb-stuffed whole red snapper recipe
Serves 2
Ingredients:
- 1 (2- to 3-pound) whole red snapper, cleaned, scaled and sliced open at the belly
- 1-1/2 tablespoons minced garlic
- 1 tablespoon fresh dill
- 3 fresh thyme sprigs
- 3 fresh rosemary sprigs
- 2 tablespoons butter, cubed
- 6 lemon slices
- 2 tablespoons fresh lemon juice
- Salt and pepper
Directions:
- Oil grill grates and heat grill to medium heat.
- Stuff snapper with garlic, dill, thyme, rosemary, butter and lemon slices. Sprinkle lemon juice, salt and pepper over outside of snapper.
- Place snapper on hot grill and shut lid. Cook fish 30 to 40 minutes, depending on size. Flip carefully one time.
Spicy grilled halibut fillet recipe
Serves 4
Ingredients:
- 4 (6 ounce) halibut fillets
- 4 tablespoons olive oil
- Salt and pepper to taste
- 2 teaspoons cayenne pepper
- 1 teaspoon paprika
- 1/2 teaspoon Italian seasoning
- Pinch onion powder
Directions:
- Oil grill grates and heat grill to medium heat.
- Drizzle fillets with olive oil, and season both sides with salt, pepper, cayenne pepper, paprika, Italian seasoning, and onion powder.
- Place fillets on grill and cook 10 to 12 minutes, flipping one time halfway through.
