Citrus grilled salmon steak recipe

Serves 4

Ingredients:

  • 1 orange, juiced
  • 1 lemon, juiced
  • 1 grapefruit, juiced
  • Salt and pepper
  • 1 tablespoon olive oil
  • 1 teaspoon Dijon mustard
  • 4 salmon steaks

Directions:

  1. Whisk orange juice, lemon juice and grapefruit juice with salt, pepper, oil and mustard.
  2. Marinate salmon in citrus juices for 30 minutes to 1 hour.
  3. When ready to cook, oil grill grates and heat grill to medium heat. Place salmon on grill and shut lid.
  4. Grill about 10 minutes per side. Remove salmon and garnish with a lemon wedge.

Herb-stuffed whole red snapper recipe

Serves 2

Ingredients:

  • 1 (2- to 3-pound) whole red snapper, cleaned, scaled and sliced open at the belly
  • 1-1/2 tablespoons minced garlic
  • 1 tablespoon fresh dill
  • 3 fresh thyme sprigs
  • 3 fresh rosemary sprigs
  • 2 tablespoons butter, cubed
  • 6 lemon slices
  • 2 tablespoons fresh lemon juice
  • Salt and pepper

Directions:

  1. Oil grill grates and heat grill to medium heat.
  2. Stuff snapper with garlic, dill, thyme, rosemary, butter and lemon slices. Sprinkle lemon juice, salt and pepper over outside of snapper.
  3. Place snapper on hot grill and shut lid. Cook fish 30 to 40 minutes, depending on size. Flip carefully one time.

Spicy grilled halibut fillet recipe

Serves 4

Ingredients:

  • 4 (6 ounce) halibut fillets
  • 4 tablespoons olive oil
  • Salt and pepper to taste
  • 2 teaspoons cayenne pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon Italian seasoning
  • Pinch onion powder

Directions:

  1. Oil grill grates and heat grill to medium heat.
  2. Drizzle fillets with olive oil, and season both sides with salt, pepper, cayenne pepper, paprika, Italian seasoning, and onion powder.
  3. Place fillets on grill and cook 10 to 12 minutes, flipping one time halfway through.
