Crispy Baked Potato Chips
Makes 4 to 6 servings
Ingredients:
- 2 to 3 large potatoes of your choice
- 3 tablespoons olive oil
- Salt to taste
Directions:
- Preheat oven to 400 degrees F.
- Wash potatoes well. Peel skin off and slice to desired thickness. Soak in water for 30 minutes; drain and dry well.
- Toss potato slices with oil and salt; lay them in one layer on a baking sheet covered with aluminum foil.
- Bake chips until nicely browned, about 15 minutes.
- Remove chips from oven and transfer to wire racks to cool. Season with more salt if desired.
Spicy Garlic & Chili Chips
Makes 4 to 6 servings
Ingredients:
- 2 to 3 large potatoes of your choice
- 4 garlic cloves, thinly sliced
- 1 teaspoon coarse salt
- Pinch of peppercorns
- Pinch of chili powder
- 3 tablespoons olive oil
Directions:
- Preheat oven to 400 degrees F.
- Wash potatoes well. Peel skin off and slice to desired thickness. Soak potato slices in water for 30 minutes; drain and dry well.
- Combine garlic with salt, peppercorns and chili powder in a coffee grinder or with mortar and pestle. Grind spice mixture finely.
- Toss potato slices with oil and half of the spice mixture. Lay chips in one layer on a baking sheet covered with aluminum foil.
- Bake chips until nicely browned, about 15 minutes. Remove chips from oven and transfer to wire racks to cool.
- Sprinkle rest of spice mixture over chips.
Best Ever Sour Cream & Onion Dip
Makes 4 to 6 servings
Ingredients:
- 1 tablespoon olive oil
- 1 cup finely chopped white onions
- 2 garlic cloves, finely minced
- 2 cups sour cream
- 1/2 cup mayonnaise
- 1/4 teaspoon salt
- 1/2 teaspoon pepper
Directions:
- Heat oil to medium heat and sauté onions until tender and golden. Add garlic during the last few minutes and sauté until just golden. Drain oil and let onions and garlic cool well.
- Meanwhile, stir together sour cream with mayonnaise, salt and pepper. Stir in cooled onions and garlic.
- Chill until ready to serve.
