Homemade dumplings

Edamame Dumplings

Makes 8 servings

Ingredients:

  • 1/2 pound frozen edamame beans, thawed
  • 1 tablespoon water, more if needed
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 1/4 cup sour cream
  • Salt and pepper to taste
  • 2 scallions, chopped
  • 1 garlic clove, minced
  • 1 teaspoon fresh ginger, minced
  • Dash lemon juice
  • 1, 12-ounce package dumpling wrappers
  • 3 cups vegetable broth

Directions:

  1. Bring a pot of water to a boil and add edamame beans; cook until tender and drain well; let cool.
  2. Combine edamame, water, soy sauce, and sesame oil in a blender until well combined and smooth, adding more water if needed (don’t make them too watery).
  3. Blend in sour cream, salt, pepper, scallions, garlic, ginger, and lemon juice, blending until fully mixed.
  4. Spoon about 1 teaspoon of filling into each wrapper, folding over into a triangle and sealing edges well.
  5. While you are filling wrappers, heat vegetable broth to a simmer in a skillet; add dumplings a few at a time and cook about 5 to 7 minutes, or until tender; remove dumplings with a slotted spoon and let cool; serve with soy sauce.

Fried Pork Dumplings

Makes 8 servings

Ingredients:

  • 1/2 pound ground pork
  • 1/2 pound cabbage, chopped
  • 1/2 tablespoon fresh ginger, minced
  • 1 scallion, chopped
  • 2 tablespoons soy sauce
  • 1 teaspoon sesame oil
  • 1 egg, beaten
  • salt to taste
  • 1, 12-ounce package dumpling wrappers

Directions:

  1. Combine pork with cabbage, ginger, scallions, soy sauce, sesame oil, egg, and salt; mix until well combined.
  2. Heat about 3-inches of oil in a skillet to 350 degrees F.
  3. Spoon about 1 teaspoon of filling into each wrapper and fold into a triangle, sealing edges well; place dumplings in skillet and fry until golden brown; remove with a slotted spoon and let cool on paper towels; serve with a mixture of soy sauce, sesame oil, and ginger.

Chocolate Dumplings

Makes 4 servings

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 3 teaspoons cocoa powder
  • 1 egg
  • 1/3 cup whole milk
  • 3 teaspoons butter, melted
  • 1 teaspoon vanilla

Directions:

  1. Combine flour with sugar, salt, cocoa powder, egg, milk, butter, and vanilla in a bowl.
  2. Bring a skillet of water to a boil and drop chocolate mixture by the tablespoonful into the water.
  3. Cook dumplings until dumplings are firm; remove dumplings with a slotted spoon and let cool; serve with chocolate sauce.
