Hot dog buns don’t have to be reserved for hot dogs anymore. Mix together some cooked shrimp, a little mayonnaise and some curry, fill the bun and you’ve got a delightful picnic dinner.
Salads are great during a warm summer night, but they don’t just have to be greens, tomatoes, and croutons. They can be filled with chicken and celery, tuna and onions, or shrimp and mayonnaise. Add some spices, and a little arugula and you suddenly have a deliciously light meal that’s perfect for a warm summer night under the stars.
You can have the shrimp salad in a bowl, but if you pile it into a hot dog bun it’s even better because then you don’t have to pack silverware. So, the next time you’re heading out for an evening picnic dinner, pack up these curried shrimp rolls from Real Simple. That way you’ll be able to spend less time cooking and more time stargazing.
