Father’s Day grilling recipes

Celebrate Dad with a Father’s Day cookout featuring a succulent grilled meal. The following Father’s Day grilling recipes will make your dad’s honorary day mouthwateringly memorable.

Grilled 5-Spice Powder Pork Tenderloins

Serves 8

Ingredients:

  • 2  (1-pound each) whole pork tenderloins
  • 3 tablespoons all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 teaspoons Chinese five-spice powder
  • Ginger Peach Salsa (recipe below)

Directions:

  1. Preheat grill to medium heat.
  2. Cut each tenderloin lengthwise almost in half; open and spread flat.
  3. Place each tenderloin between two sheets of plastic wrap and gently pound until 1/4 inch thick. Cut each tenderloin into four evenly sized pieces.
  4. In a wide shallow dish, combine flour, salt, pepper and five-spice powder. Roll each piece of pork in spice mixture.
  5. Oil the grill grate and grill pork 3 minutes; flip and grill for 3 minutes or until it is cooked through.

Ginger Peach Salsa: Combine 3 cups diced fresh peaches, 1 cup finely chopped red onion, 2 tablespoons minced fresh ginger, 3 tablespoons minced jalapeno, 1 tablespoon grated orange zest and 1/2 cup finely chopped fresh cilantro.

Grilled Red Potato Salad

Serves 8

Ingredients:

  • 3 pounds large red potatoes
  • Olive oil
  • Salt and freshly ground black pepper to taste
  • 2 stalks celery, chopped
  • 6 green onions, chopped (white and green parts)
  • 1/3 cup finely chopped fresh parsley
  • Finely grated zest of 1 lemon
  • 2/3 cup light mayonnaise made with olive oil (add more, if desired)
  • 2 tablespoons Dijon mustard
  • 1 large garlic clove, minced

Directions:

  1. Preheat grill to medium heat.
  2. Cut potatoes into 1/2-inch-thick slices. Brush with olive oil, and season with salt and pepper.
  3. Grill potatoes for 7 minutes, turning occasionally, until fork tender. Transfer to a cutting board and allow to cool. Cut into bite-sized pieces.
  4. In a large bowl, combine celery, green onions, parsley, lemon zest, 2/3 cup mayonnaise, mustard and garlic.
  5. Add grilled potatoes and stir to combine. Season with salt and pepper. Add more mayonnaise, if desired. Serve immediately.

Grilled Banana Splits

Serves 8

Ingredients:

  • 8 bananas, peeled
  • 1/3 cup coconut oil, melted
  • 2 pints vanilla bean ice cream
  • Dark chocolate sauce
  • Pineapple preserves or sauce
  • Whipped cream
  • Shredded sweetened coconut

Directions:

  1. Preheat grill to medium heat.
  2. Brush bananas with coconut oil. Grill for 4 to 5 minutes, turning to cook all sides evenly.
  3. Split each banana and place each in a dessert bowl. Top with ice cream, chocolate sauce, pineapple, whipped cream and coconut. Serve immediately.
