Sometimes a pizza is the perfect answer to “what’s for dinner.” But pizza doesn’t have to be just tomato sauce, cheese and pepperoni. Make your pizza gourmet by adding some unusual toppings.
So I was at the grocery store the other day with the intention of running in, picking up the one item I needed and running out. Of course that’s not what happened. As I was heading to the checkout, this beautiful basket of fresh purple figs caught my eye. The store was having a special, so my one item turned into two. Now that I had these figs, I needed to make something with them, the only question was what?
Well, when I got home I discovered I still had some prosciutto left from my salad and I’d seen a recipe for prosciutto-wrapped figs. But that’s an appetizer and I wanted to make an entreé. So I started wondering how I could turn a bite-sized tid bit into something more substantial. Pizza came to mind and I thought why not put them both on top of a goat-cheese slathered pizza? It’d be delicious and super easy. So that’s what I did. And my theory was correct. It was super easy, and out-of-this-world delicious.
Fig and Prosciutto Pizza
Ingredients
- 1 (8 ounce) can of pizza dough
- 4 fresh figs, sliced
- 1 cup red onion, chopped
- 1 teaspoon thyme
- 4 ounces goat cheese
- 4 slices prosciutto, cut into strips
Directions
- Preheat oven to 375 degrees F.
- Roll the dough out on a pizza pan into a 12-inch diameter circle. Spread the dough with the goat cheese; set aside.
- In a medium skillet, over medium-high heat saute the onions until they’re brown and caramelized, about 5 minutes. Add the figs and thyme and saute for another minute. Spread the onion and fig mixture over the goat cheese.
- Bake for 10-12 minutes or until crust is golden brown. Serve immediately.
