Pumpkin tiramisu

Whether you like apple picking, Oktoberfest or a trip to the pumpkin patch, fall is packed with activities and festivals for you and your friends to enjoy. After a day out, come back home and warm up with dessert and hot apple cider.

Some of the greatest things about fall are all the festivals and community events that take place. Many of which are free or super cheap, making a night out a feasible activity for most families. From apple picking to Oktoberfest to the pumpkin patch, there will likely be something fun going on from now until Thanksgiving. To offset the cost of any events, make dinner at home and then head out to the activity of your choice. If you go out as a group, consider inviting your friends over afterward for dessert and warm beverages.

Pumpkin tiramisu is like a pumpkin latte that you can eat. The creamy mascarpone cheese combined with espresso is a decadent after-dinner treat any day, but when you add pumpkin, it gets even better. If you are tired of the standard pumpkin fare, this dessert is for you.

Pumpkin tiramisu

Serves 8-10

Ingredients:

  • 3 large eggs, with yolks and whites separated
  • 1/2 cup sugar
  • 8 ounces mascarpone cheese
  • 24 lady fingers
  • 1/2 cup espresso
  • 2 tablespoons brandy
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ginger
  • 3 tablespoons pumpkin
  • 1/4 cup pumpkin spice syrup
  • Cinnamon for top

Directions:

  1. Combine 3 egg yolks, 1 tablespoon espresso, sugar, brandy, pumpkin, cinnamon and ginger in a large mixing bowl. Beat two to three minutes.
  2. Add mascarpone and beat three to five minutes until consistency is smooth.
  3. In another bowl, combine 3 egg whites and a pinch of sugar. Beat until mixture forms stiff peaks. Gently fold into mascarpone mixture.
  4. Combine the rest of the espresso with the pumpkin spice syrup. Lay lady fingers in a single layer on the bottom of a 9 x 13-inch dish and pour about half of the espresso mixture over the top. Flip the lady fingers over a few times so that both sides are coated. Some of the mixture will be absorbed as the tiramisu sets up, but if you have too much liquid, it will be soggy. Use your best judgment and pour out some of the liquid if there is too much on the bottom of the dish.
  5. Top with half of the mascarpone mixture. Repeat with another layer of lady fingers, pour the remaining espresso over the top and cover with a final layer of mascarpone.
  6. Sprinkle cinnamon over the top. Refrigerate at least an hour before eating. The texture and flavors are better if the dish is allowed to set in the refrigerator for at least 24 hours. It lasts for about a week and the pumpkin flavor gets more pronounced with time.

*The tiramisu can also be made in smaller, single serving dishes. Divide the recipe accordingly.
