  • Pasta is very low in sodium and cholesterol-free. Per cup, enriched varieties provide a good source of several essential nutrients, including iron and several B-vitamins. Whole wheat pasta can provide up to 25 percent of daily fiber requirements in every one cup portion.
  • Enriched pasta is fortified with folic acid — essential for women of childbearing age. FDA regulations require enriched grain products to contain this essential vitamin. A serving of dry pasta supplies the equivalent of roughly 100 micrograms of folic acid, or 25 percent of the recommended daily intake.

Mushroom stroganoff

Serves 4 people

Ingredients:

  • 1/2 cup heavy cream
  • 1 tablespoon all-purpose flour
  • 1/2 teaspoon salt
  • 1/2 teaspoon dried parsley
  • 2 pounds mixed mushrooms, cut into bite-sized pieces
  • 1/2 cup white wine
  • 12 ounces wide egg noodles
  • 2 tablespoons butter
  • Salt and pepper to taste

Directions:

  1. Cook the egg noodles according to package directions and drain. Set aside. To make the sauce for the dish, use a medium-size saucepan over medium heat. Combine the cream, wine, flour, salt and parsley. Stir, bring to a boil, reduce heat and simmer until thickened. Set aside.
  2. In a medium-size saucepan over high heat, melt the butter and add the mushrooms in batches. Cook until browned. Transfer the mushrooms to a bowl after cooking.
  3. Add the sauce to the pan with the remaining juices from cooking the mushrooms, and warm through on medium-high heat, stirring. Season with salt and pepper. Reduce the heat, stir well and remove from heat.
  4. Add the noodles to a large serving bowl and pour on the sauce mixture. Toss to coat. Serve warm.

Pasta is a versatile dish that is also economical. You have lots of choices when it comes to meatless meals, but like everything, consider moderation when you eat your favorite foods.
