It’s not every day we can cover our vegetables in sugar and call them a side dish. Take advantage of the opportunity to eat what would normally be considered dessert for dinner this Thanksgiving.
One of the best dishes on the Thanksgiving table is the sweet potato casserole. It tastes like dessert, but we all know that even if you ate the whole pan, there are still several pies waiting to be devoured. Only on Thanksgiving do we allow such a decadent and sweet dish to be called a side dish and serve it right along with green beans and turkey. Whether you like this normally healthy vegetable covered in marshmallows or a crunchy nut topping, it is a must have on the Thanksgiving menu.
Classic sweet potato casserole
Ingredients:
- 3 cups mashed sweet potatoes
- 2 eggs
- 1/2 cup brown sugar
- 1/2 cup butter
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1 teaspoon ginger
- 1/4 cup orange juice or cream if you don’t want the orange flavor
Crunchy nut topping:
- 1 cup chopped pecans
- 1 cup brown sugar
- 1/2 cup oats
- 1/4 cup flour
- 1 teaspoon cinnamon
- 1 teaspoon sea salt
- 1/4 cup melted butter
Marshmallow topping:
- 3 cups mini-marshmallows
Directions:
- Preheat oven to 325 degrees F.
- In a large mixing bowl, add all of the ingredients and mix until combined and creamy.
- Pour into a glass casserole dish.
- For the crunchy nut topping, combine all dry ingredients in a bowl and stir to combine. Pour evenly over the top of the casserole and then drizzle the melted butter over the top.
- For the marshmallow topping, bake for about 15 minutes and then pour marshmallows evenly over the top of the casserole dish and bake for the remaining time.
- Bake for 25 to 30 minutes.
