Herbed mini Caprese skewers recipe

These mini bites of the traditional salad are not only delicious and handy, but their pretty colors make them festive, too!

Serves 10

Ingredients:

  • 2 cups cherry tomatoes
  • 2 cups mozzarella balls, drained
  • 1/4 cup extra virgin olive oil
  • 1 tablespoon lemon juice
  • 2 tablespoons chopped basil
  • 1 tablespoon chopped parsley
  • 1 teaspoon crushed red pepper
  • Bamboo or plastic skewers

Directions:

  1. In a medium bowl, whisk or stir together olive oil, lemon juice, basil, parsley and red pepper; add mozzarella and gently stir to coat balls.
  2. Alternate cherry tomatoes and herbed mozzarella balls onto the skewers. Serve from a platter.

Grilled shrimp and pineapple skewers recipe

Grilled shrimp is always a hit at any party! These tasty bites get the added joy of sweet fresh fruit added for a delicious taste.

Serves 4

Ingredients:

  • 1 pound uncooked jumbo shrimp, peeled and deveined
  • 1/2 a fresh pineapple, cut into wedges
  • 6 tablespoons orange marmalade
  • 1/2 cup water
  • 1 tablespoon soy sauce
  • 1/4 cup snipped fresh cilantro

Directions:

  1. Prepare the grill on medium heat. Thread the shrimp and pineapple wedges onto four skewers.
  2. Place the marmalade, water and soy sauce into a small saucepan and place over medium heat. Bring the mixture to a boil and then remove from heat and stir in cilantro.
  3. Brush the shrimp skewers with the marmalade mixture and then place on the grill for eight minutes, turning once, until cooked.
  4. Serve with the remaining marmalade mixture. 

Baked frites with rosemary and garlic mayonnaise recipe

Take our word; this baked frites recipe isn’t your average fast-food fries! Baking keeps these spuds healthier and more oo-la-la, and the homemade, seasoned dip adds sophistication to them — perfect party fare.

Baked frites

Ingredients:

  • 4 medium baking (russet) potatoes
  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon coarsely ground black pepper
  • Nonstick cooking spray

Directions:

  1. Preheat your oven to 450 degrees F. Wash the potatoes well and pat them dry with a clean towel.
  2. Keeping the skin on, cut the potatoes lengthwise into 1/2-inch-thick slices, and then cut the slices in half.
  3. Spray two baking sheets with the nonstick cooking spray. In a large bowl, toss the potatoes with the olive oil and seasonings. Divide the potato stick between the two pans and bake for about 35 minutes until they are browned and crispy, stirring halfway through the cooking process.

Rosemary and garlic mayonnaise

Yields 3/4 cup

Ingredients:

  • 1 large egg yolk
  • 1-1/2 teaspoons fresh lemon juice
  • 1 teaspoon white wine vinegar
  • 1/4 teaspoon Dijon mustard
  • 1/2 teaspoon salt plus more to taste
  • 2 garlic cloves, pressed 2 tablespoons finely minced rosemary
  • 3/4 cup canola oil, divided

Directions:

  1. Whisk the egg yolk with lemon juice, vinegar, mustard, salt, garlic and rosemary until well combined.
  2. Spoon the mixture into a blender or food processor. Gradually add the oil while the machine is running. Blend until mayonnaise is thick, about seven to eight minutes.
  3. Pour the mixture into a bowl, cover, and chill until ready to serve.

Clams casino in fillo recipe

No need to gamble when it comes to choosing a delicious, elegant appetizer to serve at your New Year’s Eve party. These are a bit different from the traditional recipe, but are still swoon-worthy!

Yields 30

Ingredients:

  • 2 tablespoons unsalted butter, softened to room temperature
  • 1 shallot, finely chopped
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon kosher salt
  • 4 slices bacon, cooked and drained
  • 1 can minced clams, drained
  • 1/2 cup dried Italian seasoned bread crumbs
  • 2 tablespoons grated Romano cheese
  • 2 tablespoons fresh parsley, chopped
  • 2 packages fillo shells

Directions:

  1. Combine butter, shallots, ground pepper and salt in a small bowl. Form a ball shape and wrap securely with plastic wrap. Place in the freezer for about 30 minutes, until firm (but not frozen or solid).
  2. Crumble bacon into a small bowl and stir it together with the minced clams. In another small bowl, combine bread crumbs, Romano and parsley.
  3. Line a baking sheet with nonstick aluminum foil and arrange the fillo sheets on top.
  4. Divide the bacon mixture evenly among the shells; sprinkle with the breadcrumb mixture, also dividing equally among the shells. Cut the butter mixture into 30 pieces and add one to each shell.
  5. Slide the baking sheet into the oven and broil on high. Cook for four to five minutes, until the butter is melted. Be sure to watch closely to avoid burning. Serve warm from the oven or cooled.

Steak and Boursin wraps

These delightful appetizers are a scaled-down version of a delicious steak dinner! Your guests will love the creamy cheese that pairs so well with the beef.

Yields 16

Ingredients:

  • 1 (8 ounce) piece filet mignon, grilled
  • 1 cup light Boursin cheese, divided
  • 4 ounces thinly sliced bell pepper

Directions:

  1. Slice the filet mignon into 16 thin slices.
  2. Spread each of the slices of beef with about one teaspoon of the Boursin cheese, and then add a few slices of the bell pepper.
  3. Tightly roll up the steak and place on a serving platter.
