Fresh fruit muffin recipes

If you’re looking for a quick, healthy breakfast your kids will love, we have one word for you: muffins. Try baking a few batches and freezing for later. On busy mornings, you can zap them in the microwave or pop them in the toaster for a quick portable breakfast. (The fact that they look like cupcakes doesn’t hurt either.)

No Egg Banana Bread Muffins

Adapted from The Fresh Loaf

Ingredients:

  • 1/4 cup butter
  • 1/3 cup applesauce
  • 3/4 cup white sugar
  • 1 cup all purpose flour
  • 1/2 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 1/2 cups ripe mashed bananas
  • 2 teaspoons vanilla

Directions:

  1. Preheat oven to 325 degrees F. Line your muffin tin with paper baking cups.
  2. In a large bowl, blend together the butter and sugar, and add vanilla.
  3. Blend in the flour, baking soda and salt.
  4. Blend in the mashed bananas.
  5. Fill muffin tins about 3/4 full.
  6. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

Cranberry banana breakfast muffins

Blueberry Oat Muffins

Adapted from Whole grain flax blueberry muffins

Ingredients:

  • 1 cup quick cooking oats
  • 1 cup hot water
  • 2 cups self-rising flour
  • 1/2 cup agave nectar
  • 1/2 cup sugar
  • 1 cup plain non-fat Greek yogurt
  • 2 lightly beaten eggs
  • 1 teaspoon vanilla
  • 1 1/2 cups applesauce
  • 2 cups fresh blueberries

Directions:

  1. Preheat oven to 350 degrees F. Line your muffin tin with paper baking cups. Set aside.
  2. Combine oats and water. Set aside.
  3. In a large bowl, whisk together agave nectar, sugar, yogurt, eggs, vanilla and applesauce.
  4. Add oatmeal and flour, and stir until just combined.
  5. Gently stir in blueberries.
  6. Fill muffin tins about 3/4 full.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

Apple Cinnamon Muffins

Ingredients:

  • 2 cups all-purpose flour
  • 1/3 cup light-brown sugar
  • 1/3 cup white sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 2/3 cup milk
  • 1/2 cup melted butter
  • 2 beaten eggs
  • 1 teaspoon vanilla
  • 2 teaspoons ground cinnamon
  • 2 cups peeled and chopped apples

Directions:

  1. Preheat oven to 400 degrees F. Line your muffin tin with paper baking cups. Set aside.
  2. In a large bowl, stir together flour, brown sugar, white sugar, baking powder and salt.
  3. In another bowl, stir together milk, eggs, butter and vanilla until blended.
  4. Add wet ingredients to dry ingredients, and stir until combined.
  5. Stir in chopped apples.
  6. Fill muffin tins 3/4 full with batter.
  7. Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
