Ingredients:
- 1/4 cup butter
- 1/3 cup applesauce
- 3/4 cup white sugar
- 1 cup all purpose flour
- 1/2 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups ripe mashed bananas
- 2 teaspoons vanilla
Directions:
- Preheat oven to 325 degrees F. Line your muffin tin with paper baking cups.
- In a large bowl, blend together the butter and sugar, and add vanilla.
- Blend in the flour, baking soda and salt.
- Blend in the mashed bananas.
- Fill muffin tins about 3/4 full.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
Cranberry banana breakfast muffins
Blueberry Oat Muffins
Adapted from Whole grain flax blueberry muffins
Ingredients:
- 1 cup quick cooking oats
- 1 cup hot water
- 2 cups self-rising flour
- 1/2 cup agave nectar
- 1/2 cup sugar
- 1 cup plain non-fat Greek yogurt
- 2 lightly beaten eggs
- 1 teaspoon vanilla
- 1 1/2 cups applesauce
- 2 cups fresh blueberries
Directions:
- Preheat oven to 350 degrees F. Line your muffin tin with paper baking cups. Set aside.
- Combine oats and water. Set aside.
- In a large bowl, whisk together agave nectar, sugar, yogurt, eggs, vanilla and applesauce.
- Add oatmeal and flour, and stir until just combined.
- Gently stir in blueberries.
- Fill muffin tins about 3/4 full.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.

- 2 beaten eggs
- 1 teaspoon vanilla

- 2 cups peeled and chopped apples
Directions:

- In a large bowl, stir together flour, brown sugar, white sugar, baking powder and salt.
- In another bowl, stir together milk, eggs, butter and vanilla until blended.
- Add wet ingredients to dry ingredients, and stir until combined.
- Stir in chopped apples.
- Fill muffin tins 3/4 full with batter.
- Bake for 20 to 25 minutes, or until a toothpick inserted into the center comes out clean.
