Gluten-free California Monte Cristo recipe

With a little spin on the classic Monte Cristo sandwich recipe, this gluten-free version doesn’t compromise taste… it enhances it.

Ingredients:

  • 2 slices gluten-free bread
  • 2 large eggs, beaten
  • 1/4 cup milk or rice milk
  • Nonstick cooking spray
  • 1 slice gluten-free turkey
  • 2 slices gluten-free ham
  • 2 slices Swiss cheese
  • Mayonnaise

Directions:

  1. Heat skillet to 350 degrees F.
  2. Mix eggs with milk in a shallow dish.
  3. Spread mayonnaise on the inside of each piece of bread.
  4. Place cheese, ham and turkey on the mayonnaise side of the bread.
  5. Spray skillet with nonstick cooking spray.
  6. Dip both sides of the sandwich in the egg and milk mixture.
  7. Place the sandwich on the skillet for five minutes on until each side or until cooked.
  8. Remove sandwich from the skillet.

Tip: For added flavor, top with thinly sliced tomatoes and avocado.
