Vegan pasta salad recipe
Serves 4-6
Ingredients:
- 4 cups cooked small pasta
- 4 celery stalks, diced
- 4 carrots, diced
- 5 pieces sundried tomatoes soaked in oil, diced
- 1/2 red onion, diced
- 1 garlic clove, crushed
- 1/2 cup Vegenaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice
- 1 tablespoon red wine vinegar
- 1 tablespoon dried parsley
- 1 tablespoon dried dill
- Salt and pepper, to taste
Directions:
- Cook pasta. When finished, run under cold water or store in fridge until well cooled.
