Sugar-free banana bread recipe with whole wheat flour
Makes 1 loaf
Ingredients:
- 1-3/4 cups whole wheat flour
- 1 teaspoon baking soda
- 1/4 teaspoon cinnamon
- 2 tablespoons rolled oats
- 6-7 dates, pitted and chopped
- 2 eggs
- 1/4 cup coconut oil
- 4-6 fully ripe bananas, mashed
- 1/4 cup pecans
Crumb topping recipe
- 1/4 teaspoon cinnamon
- 2 teaspoons coconut oil
- 1 tablespoon rolled oats
- 1 teaspoon light brown sugar, optional
Directions:
- Preheat oven to 350 degrees F. Grease a loaf pan with coconut oil; then mix together crumb topping and set both aside.
- In a large bowl, sift together dry ingredients.
- In a blender, add bananas, dates, eggs and coconut oil and mix until smooth.
- Mix the wet ingredients in with the dry until smooth; then mix in pecans.
- Pour batter into the greased loaf pan and sprinkle crumb topping on top. Bake in the oven for 50-60 minutes. Cool before serving.
