Tonight’s Dinner: Wild rice pizza recipe

While dough is an obvious choice when it comes to pizza crust, wild rice makes a nice alternative, especially if you’re allergic to gluten.

Pizza is one of those wonderful dishes that’s perfect for a family dinner on Friday night. Everyone loves it and the topping choices are endless. But for those that don’t like crust or follow a gluten-free diet, pizza tends not to bring the joy. Luckily Kimberly Beaulieu from Cravings of a Lunatic came up with a brilliant idea: Make the pizza crust out of wild rice. It’s the perfect gluten-free option and it’s not nearly as heavy as a crust made of dough. And like all pizza, you can put whatever toppings you see fit on top. Want to go veggie? No problem. More of a meat lover? Have at it. You can do whatever you want and because it’s on top of a wild rice crust, the possibilities are endless since anything and everything goes with rice.

Wild rice pizza

Ingredients:

  • 1 (4 ounce) box wild rice, cooked
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
  • 1 cup pizza sauce
  • 1-1/2 cups shredded mozzarella
  • 1 cup pepperoni
  • 1/4 cup purple onion, chopped

Directions:

  1. Preheat oven to 450 degrees F. Spray a pizza pan with nonstick cooking spray and set aside.
  2. Cook the rice according to the package and fluff with a fork. Mix well with the eggs and butter and press into the prepared pizza pan.
  3. Spread the pizza sauce over the rice crust. Top with mozzarella, pepperoni and purple onion, and bake for 10 to 12 minutes. Slice and serve immediately.
