Cheeseburgers and fries make a delicious lunch or dinner, but turning those burgers into little pockets makes them the perfect entree for tiny hands as well.
Sometimes there’s nothing better than a cheeseburger. Nothing else will satisfy that craving and adding french fries as a side just makes it that much better. There’s only one problem with those cheesy patties, whether they come from the fast food joint or your own oven: A lot of times they’re just too big for little hands (and mouths) to get around. Thankfully Taste of Home had a great idea. Simply take everything you love about a cheeseburger from the plastic-wrapped cheese (Don’t kid yourself; it really does make the best cheeseburgers) to the delicious ground beef and roll it up into a little pocket. Now not only can you have one of life’s greatest pleasures, but the small mouths in your family can have them too. And because they’re homemade, they’re much better than the burgers that come in those little red and yellow smiling boxes.
Bacon cheeseburger pockets
Makes 8
Ingredients:
- 1 pound ground beef
- 6 bacon strips, chopped
- 1/2 onion, chopped
- 1 (8 ounce) package processed cheese (like Velveeta)
- 1 cup diced tomatoes
- 1 tube giant refrigerated biscuits
- Ketchup and mustard for dipping
Directions:
- Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper and set aside.
- Cook the beef, bacon and onion in a large skillet over medium-high heat until the meat is no longer pink, about five minutes. Add the tomatoes and cheese, and stir until the cheese is melted.
- Flatten each biscuit into a large 6-inch circle. Spoon a third of a cup of the beef mixture onto each biscuit. Fold the dough over the filling and place seam-side down on the prepared baking sheet.
- Bake the pockets for 18-20 minutes or until golden brown. Serve with bowls of ketchup and mustard for dipping.
