Pasta can be a daunting task because there’s usually a thick hearty sauce involved. But when meat and veggies are the only sauce you need, pasta becomes the easiest dinner in the world to make.
Pasta is delicious any time of the week. It can be the perfect way to get you fueled up and ready for the work week ahead, or the warm comforting exclamation point at that long week’s end. But no matter when you choose to make your pasta dinner, there’s nothing better than a pasta that takes only 30 minutes. Why is this such an easy pasta dish? Because there’s really no sauce to speak of. The sausage, broccoli rabe and vinegar are what give this dish its wonderful flavor and will keep everyone, even the pickiest of eaters, coming back for more.
Sausage and broccoli rabe bowties
Serves 4
Ingredients:
- 8 ounces mini farfalle pasta
- 8 ounces sweet Italian sausage, casings removed
- 1 tablespoon olive oil
- 1 shallot, chopped
- 2 tablespoons red wine vinegar
- 1 bunch broccoli rabe, chopped
- Salt and pepper to taste
- Parmesan cheese
Directions:
- Cook the pasta according to the package directions. Drain and return the pasta to the pot.
- While the pasta cooks, heat the oil in a large skillet over medium-high heat. Add the sausage and cook until no longer pink, about five minutes. Add the shallot and cook for another minute.
- Pour in the vinegar and cook, using a wooden spoon to scrape up all the browned bits. Add the broccoli rabe, sprinkle with salt and pepper and cook until the broccoli rabe is green and tender, about two minutes.
- Stir the sausage mixture into the pot of pasta. Divide between four bowls and sprinkle with Parmesan cheese.
