Tonight’s Dinner: Matzo crusted salmon recipe

Even though Friday was the first night of Passover, there are still four days left to make dinners that don’t include leavened flour. This matzo crusted salmon is a great answer to what’s for dinner?

Passover was Friday and that means this whole week is dedicated to matzo-based meals. Although there are a few options like this matzo pizza, by the third or fourth night, it gets harder and harder to come up with dinner ideas that don’t include whole wheat or leavened flour. But luckily, Better Homes and Gardens had a delicious option that isn’t only kosher but will help you use up some of your extra matzo.

Matzo crusted salmon

Serves 4

Ingredients:

  • 2 squares matzo
  • 2 tablespoons fresh dill
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • 3 tablespoons olive oil
  • 4 skinless salmon fillets

Directions:

  1. Preheat the oven to 450 degrees F. Drizzle olive oil in a large baking dish and set aside.
  2. Place the matzo, dill, salt and pepper in a food processor, and process until you have coarse crumbs and transfer to a shallow bowl.
  3. Brush each of the salmon fillets with oil and dredge in the matzo mixture until fully coated. Place in a prepared baking dish and bake, uncovered for 10-13 minutes or until fish flakes easily. Serve immediately with lemon wedges and fresh dill.
