Cinco de Mayo party treats

No one wants to spend hours in the kitchen when throwing a party and now you don’t have to. These easy, flavorful recipes will make you and your guests happy!

There is nothing better than a party with great food! This coming Cinco de Mayo, don’t worry about what to cook. We have that covered with these simple and easy appetizers that won’t have you spending all night in the kitchen. Instead, you can spend your time partying with friends!

Mile high nacho recipe

Serving size 1 tray nachos

Ingredients:

  • 1-1/2 pounds ground beef
  • 1 package taco seasoning
  • 1 (9 ounce) bag yellow corn tortilla chips
  • 1-2 cups refried beans
  • 1 bunch green onion (greens chopped)
  • Jalapeno peppers
  • 1/2 cup cilantro
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded Mexican blend cheese
  • Guacamole
  • Sour cream
  • Salsa

Directions:

  1. Preheat oven to 400 degrees F.
  2. In a pan, brown meat and add taco seasoning following the package directions.
  3. On a cookie tray lined with parchment paper, put 1/3 bag of tortilla chips on tray. Cover with 1/3 meat, beans, green onions, jalapeno peppers (to taste), cilantro and both cheeses. Bake for five to seven minutes until cheese has started to melt. Pull out of oven, add another layer, bake until starting to melt and then top with final layer of ingredients, adding a little extra cheese on top if wanted.
  4. Serve immediately from oven with guacamole, sour cream and salsa as condiments.

Cheese-stuffed jalapeno recipe

Serving size 50 stuffed halves

Ingredients:

  • 25 jalapeno peppers (cut in half and seeds removed)
  • 1/4 – 1/2 cup diced onion
  • 1/4 – 1/2 cup finely chopped cilantro
  • 8 ounces cream cheese
  • 3 cups shredded pepper jack cheese (cheddar would work nicely too)
  • 5 slices cooked crispy bacon (crumbled)

Directions:

  1. Preheat oven to 375 degrees F.
  2. Cut peppers in half and remove the seeds. Make sure to wash your hands after cutting!
  3. Mix together the onion, cilantro, cream cheese, shredded cheese and crumbled bacon. Fill each jalapeno half with the same amount of the cream cheese mixture and place on foil lined baking sheet.
  4. Bake for 25-30 minutes until cheese is bubbly and lightly browned on top.

Three cheese quesadilla recipe

Serving size 5 (10-inch) quesadillas

Ingredients:

  • 10 (10-inch) flour tortillas
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded pepper jack cheese
  • 1 cup shredded provolone cheese
  • 1/4 cup chopped pickled jalapenos (for a less spicy option, use chopped roasted red bell pepper)
  • 1/3 cup chopped green onion
  • Salsa
  • Sour cream

Directions:

  1. Add butter to a pan, let it melt and add flour tortilla, 1/5 of the cheese, jalapenos and green onion. Top with other tortilla, cover and let cook for a few minutes.
  2. When the bottom is toasty brown, flip and cook other side, uncovered. Continue with other quesadillas.
  3. Cut quesadillas into small wedges and serve with salsa or sour cream.
