No need to make the same boring chicken salad week after week. These three recipes take a classic and give it some spice and flavor!

Chicken salad is a classic lunchtime staple. We think it’s great on classic white bread and even on fancy French croissants. These three totally different, but totally delicious, chicken salad recipes will have you screaming for more!

Apple and grape chicken salad recipe

This recipe mixes the classic flavor of chicken salad with the crispness of apples and the sweetness of red grapes. For added texture, stir in some chopped pecans.

Yields 4 sandwiches

Ingredients:

  • 2 cooked boneless skinless chicken breasts (diced or shredded)
  • 1 small apple (diced)
  • 1/2 cup halved red grapes
  • 1/4 cup diced red onion
  • 1/2-1 cup mayonnaise
  • Salt and pepper to taste
  • 1/3 cup chopped pecans (optional)

Directions:

  1. Add ingredients to a bowl and combine. Store in refrigerator until ready to use.
  2. Enjoy on bread or plain.

Curried chicken salad recipe

This chicken salad is all about flavor! It will be sure to spice up your lunch and have your co-workers begging for the recipe.

Ingredients:

  • 2 cooked boneless skinless chicken breasts (diced or shredded)
  • 1/4 cup chopped cashews
  • 1/2 cup nonfat plain Greek yogurt
  • 2 tablespoons mayonnaise
  • 2 teaspoons curry powder
  • 1/3 cup dried cranberries
  • 1/4 cup chopped parsley
  • Salt and pepper to taste

Directions:

  1. Add ingredients to a bowl and combine. Store in refrigerator until ready to use.

Lemon basil chicken salad recipe

Lemon adds a nice fresh flavor to basil-flavored chicken salad and sour cream adds a nice creaminess.

Yields 4 sandwiches

Ingredients:

  • 2 cooked boneless skinless chicken breasts (diced or shredded)
  • 1-2 ribs diced celery
  • 1/4 cup chopped fresh basil leaves
  • 1/2 cup slivered almonds
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise
  • 1 teaspoon fresh lemon juice
  • Zest of one small lemon
  • Salt and pepper to taste

Directions:

  1. In a bowl mix together the chicken, celery, basil and almonds.
  2. In a small bowl mix together the sour cream, mayonnaise, lemon juice and lemon zest.
  3. Combine the two and store in the refrigerator until ready to use.
