Here’s a way to get people to like tomatoes, just add vodka. Simple as that, really. When I entertain, this appetizer is always a hit. You know it’s going to be a good time when vodka is involved, especially when it’s in the food AND the cocktails.
P.S. Be prepared, your guests are likely to ask for this appetizer recipe.
Step one
Rinse tomatoes. You can do this in the plastic container or a colander is fine.
Note: Two cups of either cherry or grape tomatoes works best.
Step two
With a toothpick, poke a hole through the center of each tomato and then transfer to a large bowl with fitted lid.
Step three
Two cups of vodka, don’t be shy. Add the vodka to the bowl of tomatoes. I like to refer to it as a vodka bath.
Step four
To bring out a little sweetness in the vodka infusion, add a dash of sugar, maybe one-half teaspoon or so. Gently stir in the sugar.
Step five
Cover the vodka-infused tomatoes with a fitted lid and place in the refrigerator for 24 hours.
Step six
Before your guests arrive, set out toothpicks in a fun container or jar. If you have small ramekins, these are great for dipping salts.
You can use any gourmet salt you choose. Here, I have a classic sea salt, Hawaiian alaea sea salt and a truffle salt.
Step seven
After 24 hours (of waiting very patiently), drain the vodka-infused tomatoes. If you don’t want to throw out the vodka, you can mix up a few bloody marys while you wait for your guests. I give you permission.
Step eight
Serve the vodka-spiked tomatoes in a martini glass, alongside the toothpicks and salts for dipping. Let the dipping begin!
